I thought DD had good axe apts, at least, my DD win was with an axe.
DDar isn't a terrible start, and training evo on a DD is a good idea. But I would suggest playing as a meleedude for the most part, wearing heavy armor and swinging a big axe around. I suppose worshipping pak means you don't even have to worry about using your own MP pool to recharge your heal wand...
If you're picking a god solely on making it easier to win, I'd say go with trog, but keep the rest of your plan pretty much the same. Train fighting, axes, dodging, armor, and evocations. Trog's hand will give you some healing, but you won't have enough piety to completely rely on it. You'll use your heal wand when needed, and since you're training evo, you'll have plenty of MP points to spend on recharging your heal wand.
I think your plan will still work with Pak, but you can't start with Pak, and while Pak is more helpful strategically, trog will be more helpful tactically. Since you have basically unlimited HW either way, you don't really need any help strategically...
EDIT: Also, trog will gift you weapons, which will on occasion actually be useful. So that's something too.
