Well this has been my best run/char so far. So I don't want to die and I'm a little confused about what to do next. I'm on Dungeon:13 at the moment and it's going pretty well. However, I have spotted a Seven-headed Hydra which I don't think I can take. I have found the entrance to Orc and the entrance to Lair has be on this floor.

Therefore, shall I continue down the main Dungeon and/or take on the Hydra? Or shall I try a branch? Bearing in mind, I have never entered a branch before. Also, I have both Unarmed Combat and Fighting at 11 now. I was thinking of training Dodging for a while. Would that be a good choice? Thanks in advance.

You're at the point where it is very, very standard to divert your attention to the branches for the next couple of hours. Feel free to go destroy the lair or orc(1-3). If I had clarity or a piece of MR equipment it'd definitely be time for me to hit up orc 1-3 while the experience points were still relevant to my character, though you could probably do it without clariy/MR quite easily as well. Then I'd probably head over to the lair and expect to completely clear it (while dodging hydras). Of course, use your judgement. Sometimes there are some very dangerous Orc armies before level 4 although it is quite rare in my experience.

Orc 1-3 is very easy for your character type IMO, just pull your enemies up a flight of stairs. Never chill out on a screen full of orcs just because the ones next to you are weaklings. Priests will smite you and it can be quite surprising (esp. with low evasion) how quickly a few swings from those weakling orcs with those smites could take out your hp bar.

I'm not sure what the best way for a ToMo to handle hydras is. My guess is you could pick up a giant club or GSC, drop like two points in maces and flails, and finesse. You'll definitely annihilate a hydra that way. Later on you'll just be strong enough to fight them with the club and heroism I'm sure.

Well this is now a YASD. Entirely my fault, now I want to kick myself. I became way too over confident and put way to much stock in Heroism.

Ok, I forgot that I had fallen through a shaft on D:10, down to D:13. So I thought I might aswell clear out the floors in between on my way to Orc which was on D:8. On my way back I found a portal to an Bailey. I entered, was doing quite well but the orcs just kept coming and there were no choke points to funnel them into. Oh well... I'll probably stick with a Troll Monk again for my next try, I quite like them.

Orc is harder than Lair in many ways, primarily the layout of the levels (no chokepoints without a ways of digging) then the chance to encounter Nasty Uniques like Nessos/Sonja and the big threats of Orc knights, Warlords, High Priests, Sorcerers and hordes of plain Priests.

I do Lair every time before Orc and by that time Orc XP pretty much sucks but I do it for the loot. Some people leave it for even later when they can kill things faster.
By worshipping Okawaru you can use a flaming slashing weapon to deal with Hydras quite easily. I do it all the time on Trolls. Failing to get a weapon of flaming you always have wands of fire/cold/draining and your best bet probably, large rocks.

Unfortunately he never found the Lair. :)

Baileys can be deceptively difficult, depending on the layout and your character type. That said, at your level, you should have tried identifying your scrolls some. You had fear ID'd, which would have given you a chance to run away. The potion of speed also could have gotten you out if you'd quaffed it early enough. Heck, speed could have won the battle for you if you'd quaffed it early enough. As well, less focus on Fighting and more on Invocations might have let you have Finesse useable for that fight.
