I've thought before of proposing a unique that:
-occupies multiple squares, like a kraken
-has ten thousand hp or so
-heals very very slowly
-eats adjacent monsters to gain their hp
-throws monsters and dungeon features to attack at range or just to clear a 2-space wide path to the player
-is too big to use stairs
-Creates shafts to follow the player to lower levels. The player sees rocks and stones fall from the ceiling before the big thing comes crashing down and pursues.
-Creates shafts on upper floors to pursue the player to higher levels. The player sees shafts and hears noise, then the big thing comes crawling up.
-Can eat the player, sending her to a portal (kind of how banishment works) where she is surrounded by digestors- constricting, acid-melee enemies with no EV, lots of resistance, small hp, and epic AC. Kill one of them to spill out of the stomach of the now dead big thing and into the dungeon.
But cyclops throwing sheep is at least half as much fun.
