tl;dr
Orc fighter of Chei.
Found dragon armor early, but after got frosted butt (1/3 health with one frostbolt) from orc wizard - took it off.
Then found plate mail and chain mail of rPois. And +6 ring of protection. +6 Strength ring wearing since sewers.
Question is:
*Wear plate with rPois-ring + Strength
*Wear rPois mail with DEF-ring + Strength
*Wear plate with DEF-ring + Strenghth
?

Also, what to enchant in future?

Assuming Jr.'s not dead already, I'd go with the plate by default + wear the AC ring, then switch to the poison ring when bees and snakes start appearing in large numbers. Wear the dragon armor for fiery encounters, of course. As for enchanting, I'd hold off until you get something like a branded platemail or a non-fire/non-ice dragon armor.

There's no reason for the strength ring to even be on the map here. You have enough strength to wear the plate, so wear the plate and your best two rings. Protection permanently and switching between rPois and SInv on a conditional basis, in this case.

Once you want to pick up basic spellcasting and have a way to cover the ice weakness, the dragon armor will be very valuable, but for now you probably just want to live.

Found orcish plate of rFire +2. Neat. Lost bad muatatios. Awesome!
So, now I have a palte and 3 scrolls of enchant armour. Should I chant it on this plate or not?

It's either that or you wait for a gold dragon armor, IMO. I'd enchant your current plate just so you don't die *before* you get GDA.
