Bad luck, bad player or both?

I'm trying centaurs. I know I don't know how to play them but I wanted to try them anyway. I was in level 2 and these were the three exits to level 3 in the order I tried them:
- the first one had Sigmund, I fled to the stairs and he pursued me and turned invisible
- The second one had Ijyb (sometimes he can have a very nasty wand), an adder and a bunch of other monsters
- The last one had 4 or 5 orcs, one of them a priest and they were ADJACENT to the stairs!
I went up, the upstairs was in a corner, nowhere to escape. In hindsight I could've tried the potions there was might and berserk but even so, I was probably a goner.
Considering centaurs, do you level up armour or dodging at all? If so, when?

I'm inclined to say mostly bad luck that you got all 3 so early.
If not all of the orcs were immediately next to the stairs when you first met them, maybe dragging one or two upstairs first would have helped improve your chances (avoid facing the whole pack at once).
There might be some chance of kiting Sigmund with good placement but yeah, invisibility (and confusion) tend to make him quite nasty if you can't hit really hard, really fast. Grinder that soon can also be quite obnoxious with the disabling attack.
It might have been worth trying a hatch to drop down to some random spot and look to rush off toward some other quiet nook/corner and then work your way back out of the narrows slowly. Maybe gain some items/xp and avoid the uniques as long as possible, maybe even take a chance slipping down another whole level and seeing if anything useful sits in accessible spots there.

The only thing offhand I can think is that maybe if you had read-id'd the identify scroll, and used it on a potion, you'd have either might or berserk, which could've got you through those Orcs. Not a sure rescue, but might've given you a shot, especially the zerk if you won that coin flip.
Oh, and you probably should've gone down the stairs holding your bow, not the short sword. It's faster (given your training), higher damage, and you could switch back after confirming there were no threats.
That is nasty luck in any case.

They were. That's why I was complaining.
The thing is I tried all 3 exits and got major bad luck in the third one. They were close to the stairs. A pack of orcs including an orc priest on D:3 surrounding stairs is quite unfair.
I have tremendous respect for streakers and don't know how they cope with stuff like this.

Bad luck indeed. However, I wouldn't wear +0 plate with Str 13 when I have spells which the plate destroys. You should have Slow memorized and castable. You could have tried to kill Ijyb from afar with the bow (run away if he has a nasty wand). Maybe use the net first... of course, this is pure speculation.

What would be the best centaur to try? Arcane marksman is probably not a good idea. I'm not leaning towards Be because Trog doesn't help with bow. I'm wondering whether to use a CeHu or CeGl and go with Oka be easier?
Talking about skills, should I increase Dodge and Armour at all? I'm going with fighting at the beginning and or bows or pole arms (reaching with Ce should help).

Out of all three I'd say Sigmund surprisingly was the most manageable considering you had 4 curing potions ready. All you need is a large enough pillar to kite him around when he goes invis or comes in melee range. Also, although it probably didn't have any impact in this case, you shouldn't end up with a short sword wielded in a scary situation. These 5 auts might become crucial in the early game.

I'd say the Ijyb pack is probably the best, because you should be able to separate them with stairdancing, and nasty wand possibilities aside, Ijyb isn't usually one of the nastier uniques. Certainly easier than Sigmund, at least. And I'm saying this as someone who's 4 win streak was ended when the fifth character died to Ijyb with a wand of flame:

Since nobody has answered your question about Armour and Dodging yet:
You'll generally get more mileage out of Fighting, than Armour or Dodging on a Centaur. You'll likely end up in heavy armour on a lot of Ce's because they have huge Strength, and Ce also have a size penalty to EV, and you get bonus AC from a barding eventually assuming that one generates, so you'll generally also get more mileage out of Armour, than Dodging.
You'll probably want to split your earlygame between whatever damaging skill you're using and Fighting, transitioning later into eventually picking up some Armour skill (probably not more than ~6 levels initially) around the time that you have some heavy armour to wear. You can delay picking up Armour depending on what items generate, but you probably don't want to delay too long.
There are also some backgrounds on which you might not want to jump into the heaviest armour you find as early as possible. If that's the case for your character, you can instead focus on your damaging skills and try to pickup some Dodging and Fighting as needed. (But again, Ce won't usually end up with amazing EV and you're sitting on a pretty large Stealth penalty anyway, so there isn't usually much benefit to going light armour Ce unless you're trying to make one work as a MASTER BLASTER or something.)
The major strength of Ce (besides their huge HP pool) is their reduced movement delay. With this, your character is even better than usual at just walking away™. It's really strong. You can also use this to do things like gaining range for reaching attacks or spells or ranged attacks.
A thing that a lot of newer players don't remember is that leaving a thing alone is very nearly as good as killing it in Crawl.
Disclaimer: I have been spending my time on weeaboo rhythm games lately, please ignore everything I said if Centaurs were reworked into, like, Gnomish stabbers or something in 0.2whatever we're on now.

Oh right! OP asked other questions that hadn't been answered yet. Implojin's quite correct, so I won't repeat that stuff, although I will mention that the value of training armor goes up significantly once you have a barding. Early on fighting, once you have heavy armor, then armor. You can do a little dodging late game, especially if you have good dex somehow (either gear, or you raised it), but it isn't your main defense.
As for the still unanswered question: what background? Hunter is the most common to start with a shortbow and get arrows, although you'll be low on arrows until you run into an enemy centaur or two, after which you can use bows more often. If you want to instead have a decent melee attack until you kill 2-3 centaurs and then can start using bows more regularly, any of the warrior backgrounds (Fi, Gl, Mo, As) are good. You probably don't want a shield as ranged attacks are recommended, so Gl is probably the best one to start with.

If you just want to win a centaur, then I recommend CeBe obviously. For almost every species Be is the most straightforward and user-friendly option, the exceptions are Fe Op DE Sp Fo Mu and Gh, I hope I did not miss any.

My 2 cents: I dunno the dungeon layout but ijyib with a Ce with a bow and 20ish arrows usually is very easy as you can hit him from edge of LOS until he's dead, because the only wands that have full LOS are poly, paralysis and disint. The first two won't ever kill you against ijiyb, the latter can but usually you should be able to survive 1 hit and run away. Don't remember if current iteration of wand of flame is full LOS for monsters but in case you just run away and its damage is low anyway.

FeBe is pretty legit
FeBe is not awful*, but by no means the strongest option. Not being able to use ozo's armour and statue form as a felid is a huge downside.

Against Sigmund:
You had the option of using corona (AM). You get first action. You have 4*curing. You have a ranged weapon. Plate killed these options and made it sure that you were noticed.
Ijyib:
Tricky because this is stairs #2 and especially with plate anything in LOS will act first now. Ijyib didn't use a wand even when you gave him several turns to act ? (down+up)
He might have a useless wand or an area wand (iceblast) where damaging allies comes into play whether the wand is used or not.
I would have tried my luck first (with corona+curing+ranged weapon and not-plate) against Sigmund and see whether I can land corona.
Plate I cannot understand (not on AM).
You'll see in the log that now and then you've wasted a full turn (when attacking) because your armour prevented you from using your weapon.
You can play Ce like any other melee:
Put on the most heavy armour. Shoot arrows and use it in melee letting them punch at you and walking away if damage bcomes too high.
Autoexploring.
You could also explore manually which mans that unlike a melee char you want to make sure that any new tile you'll see is 8 tiles away from you and not 2. It is a big diff. in Lair whether you can kill fast enemies from a distance or not.
Autoexplore will put you into many situations where you walk around a corner and see a pack of fast hard-hitting monster.
Fighting(+weapon) is best suited for Ce.
Oka is an excellent god for Ce (Ammo, heroism, barding-gift).
Armour/Dodging comes last. You shouldn't get hit anyway (in most cases) but this involves a lot of clicks/manually exploring.

On a CeHu, you typically you want to wear heavy armour and wield a two-handed weapon (so that you can use bows/crossbows). For now, you can wield the demon trident as your melee weapon, but you probably want to use a two-handed weapon later on. Longbow of flaming is good for ranged.
Okawaru could eventually give you better weapons and armour, but don't depend on it.
Whether you should learn spells or not depends on how you want to play. You can play either way. Spectral weapon is good.
You have enough Evo. I would stop training evo/invo and start training armour. You can also start training polearms for melee, but you can get by with 0 skill for now.

- Yes, use all your enchant scrolls on the longbow of flaming.
- You're not carrying anything besides what you're wearing and I'm too lazy to find and look through your .lst. What you're wearing looks fine. Something besides the ring of wizardry would be an improvement, but maybe there is nothing useful. Use your scroll of enchant armour, on either the hat or cloak.
- I probably wouldn't pick up spells now, but Spectral Weapon and the demon trident are strong. And Regeneration.
- Train Armour until you get a few cheap points of AC. Then Dodging. Then Fighting. You can take Bows to 20, then stop, but you should be using Heroism for every non-trivial fight, so you don't need to train more Bows (and could have stopped at 15). Fighting + some Armour and Dodging for the rest of the game (stop the latter two at 22 because of Heroism). Ideally, you use bows to kill everything hard, but consider whether you want to train a melee weapon for your sanity. If you do train melee, don't forget to use the bow in tough fights! Also, use Finesse in really tough fights.

I went to the obvious places and have more questions:
- Considering armour, I think the best one is the one I'm using. +1 CPA gives me much more AC though.
- Oka gave me a longbow of velocity. It's probably better than the one I'm using atm since it works against everything right? Too bad I invested a bunch of scrolls but they did make my travels so far a breeze.
- Shoals, spider or Elf? Frankly, I hate all of them. Spider can kill me very, very quickly I think. Shoals is, well, shoals. I using ranged so it's probably easier but both my AC and EV are pretty laughable. I have MR++++ but no other resists. Is Elf better atm?

Inv. on armour is strong especially in spider+shoals.
There are merfolk who can sinv but most not.
Make sure that
a) you're flying while inv or not over water
b) contam stays low
c) each battle shouldn't last longer longer than inv.lasts.
Elf is deadly, you will get drowned in summons.

Longbow of flaming is better against most targets. If they are fire-resistant (I don't recall anything in Spider or Shoals with rF+), you can switch to the velocity one. Just shooting them enough times with the flaming bow also works.
I would go to Shoals first because monsters are faster in Spider. You can also peek into Elf (and get back out if you feel it's too dangerous): you can often find shops there.

Yeah, you're overthinking the bow. The +7 longbow of flaming is better than +2 longbow of velocity in almost every situation, and maybe even every situation due to the enchantment difference.
Not Elf. Spider would be standard, but Shoals might be easier with this character. The Invisibility suggestion is excellent.
