Stealth was never intended to let you stab all enemies - just because you can stealth stab some of them, you still want your primary method of stabbing to be EH early on, and confuse a bit after that. Invis works if you find it for some things, ally distraction can also work, etc etc. Stealth is still very helpful since it determines stab damage, and it's very cheap to train. You probably don't need to max it - maybe ask someone who plays more stabbers, but I think you could leave it somewhere around level 15 and be fine.
Your main issue, once you get to mid game, is coming up with a plan to deal with things you won't be able to stab. Running away/being a ninja for all runes is possible, but I'd probably recommend going either melee or magic at some point. I've only won two spriggans because the low health bothers me a lot.
