Can I be reasonably sure of getting the spells I want?

Specifically, summoning spells, if I don't choose Sif Muna? I really don't want to be locked into choosing her just to make sure I find more summoning spells beyond what my beginning book provides.

In general you will find most spell books every game, with the exception of certain rare ones: the 3 high level ones (grand grimoire, annihilations, necronomicon), and probably the book of Warp. Finding those are kind of hit or miss, but you'll usually find some of them. Of course it's possible you'll never find a "common" spellbook, but if your only requirement is to find more general summoning spells, you don't need sif for that.

Very disappointing, I really wish Vehumet's summoning support wasn't removed. Being locked into choosing the same god every time I want a reliable summoning game kind of sucks.

this game is not designed for you to have a build in mind and then be handed it. once you figure that out you will have a much easier time with things. you gotta go with the flow man. build your char out of what is provided. if you try to fight "the system" you will end up disappointed 98% of the time.

tldr: work with what you get and dont train for things you dont have yet and expect to get.

You will most probably find (many) more summoning spells beyond your starting book. It may take some (or a lot of) time and you may not find some particular spell at all. There's also the acquirement possibility.
