If you find a particularly good weapon, then sure, pick it up and use it, but if you choose Mo you probably should just stick with UC.
Right out of the gate, a human monk will do 2.4 AED against orc, 1.6 AED against an adder. With a short blade and 4 skill in short blades, it will do 2.2 (orc) or 1.4 (adder). A HuMo starts with 4 in unarmed combat, 0 in short blades, and does not start with a short blade available.
Switching from UC --> some weapon on a monk puts you at a disadvantage, in general, although of course a particularly good weapon can outweigh that disadvantage. Just picking up a +0 whatever is likely going to be a bad idea though. (Except if it is a demon <foo> in early game, but that's staggeringly rare.)
Also I have no idea why a Monk would alter weapon choice based on the first altar you find. I guess with some gods you want to get a brand eventually, but TSO is pretty bad to start (and even then you could always bless a ranged weapon which is cooler anyway), Lugonu is rarely available in early D and temple, and with Kiku you can just take the necronomicon, since you should already have a good weapon (your fists) by the time the gift becomes available.
@ Lasty: If you aren't wearing heavy armor, UC starts out pretty quick (1 aut per attack, and you'll get to 5.4 skill fast, which is 0.9 per attack), and then you hit 0.7 at around the same time as a bastard sword or morning-/eveningstar, which is sooner than a great sword. VSMo might not be great, sure, but for a weapon that gets high base damage eventually, UC also has a pretty good "speed curve."
