As a Merfolk? Such a transformation would cause you to lose your swimming abilities and drown, no?

Re: Can you be porkalated/polymorphed in deep water?

You cannot. In fact, if you somehow do lose your swimming abilities while in deep water (which would be a bug), you won't actually drown.

Now, if you are flying over deep water you can get polymorphed, and if you fall into deep water while polymorphed into a form that can't swim, you will drown (or scramble) if it is not a form that you can voluntarily end.

Relative question :
Can a huge monster (dragon, elephant...) push you in deep water ?

Afaik you can't be trampled into lethal liquids unless you can survive in them (by being a Mf/Op/LO or by having permaflight).
