On an aside, I once worked at a Thai/Japanese restaurant and the Japanese guys who did the sushi were making a big ass bowl of real wasabi and told me to smell it. So I leaned over the bowl, and took a big fresh breath in through my nostrils, and was immediately kicked in the face by a white horse and fell over and almost peed myself. The Japanese guys did too, they were laughing so hard. After that they made me a bunch of sushi and told me I was an honorary Japanese. True story.

Brussel sprouts are like tiny cabbages. Sooo good mixed with oil and salt and baked at high heat. Top tier contender for sure.

<Braised greens> and <cooked root vegetables> is one of my favorite go-to side dishes when I don't want to do anything fancy. Pretty much any mix-and-match of kale/cabbage/collard/other tough greens with potatoes/sweet potatoes/rutabaga/beets/carrots/other tubers is solid. Rather than mashing, I'll usually cook the roots in home fry cuts in a wok until they're about 5 minutes from being done and then braise the greens on top of them (because I'm lazy). Add salt and crushed red peppers with the greens, and then top it with ground horseradish root for some extra flavor!
