Generally after new Updates I think there is no problem with doing Let's Plays - with a game like DCSS which constantly updates itself, stuff can change quite a bit over time. As for the issue of long-winded videos, one idea I had for some DCSS Playlist videos might be 'jump points' so people might jump to specific events in your video where something you think as noteworthy might be happening. If you are a fan of editing you might also 'speed up' your video so that boring parts go by faster until you get to the less boring parts (this will probably work best with post commentary if you do it).
Note that while I use Fraps for a lot of my content, you may also look into other recording software. I personally recorded all my DCSS videos with something called BB Flashback Express, and for newer systems you may look into other Recording Software that captures your Destop instead of just the game; I know captnduck had stated recently to me that he was using
OBS to do his streaming on Twitch.
