A little bit of stealth is great for any character that's not wearing heavy armour, especially in the early game. It's not about stabbing, it's about being able to back away from things you don't want to fight right now.

I don't think I can properly explain why mountain dwarves were removed, but I'm pretty sure "they're too much like D&D" was not on the list.

DCSS is a blend of many mythologies and inspirations as well as original content, of which the ancient Greeks are only a part.

Haha, yep, was just figuring that out for myself. My Armour Skill modifier rounds to 4 without the extra 1 base AC, but to 5 with it. I just don't think I've ever noticed this effect before in all my years of crawling...
