The only difference between DsBe and HuBe at xl1 is slightly worse apts. And HuBe is not hard. Also unless you're playing trunk, why would nightstalker be bad for a berserker? It allows less enemies on screen simultaneously which is definitely a good thing.

I used to have the same problem. It's pretty serious because it moves you multiple spaces even if there are monsters in view and has gotten me killed at least once. Then I realized you can set macros to the number keys and I questioned why in the hell I set them to the function keys to begin with.

The piety gain depends on how much skill points you gained. Basically, it means it just depends on XP. Aptitudes have no effect.
