To be perfectly factual, because armour skill multiplies base AC but not enchantment, it does affect helmets (because helmets have base ac of 1) but not hats (because hats have base ac of 0).

I know there is a tiny accuracy penalty for all melee attacks, but this is so tiny it is pretty much unnoticeable. For UC, attack delay is affected as well.

I believe great sword of speed will get to 3.5 aut per swing whereas max skill unarmed is 5.
For more detailed information you could copy the character and use fsim.
