The whole point of gnoll is you can swap to whatever you want whenever you want. Yes a +8 speed longbow is good enough for the entire game, but you will find other endgame weapons as you go, and some will be even better. Such as shield+demon weapon. Gozag plus 9000 gold works well. Ironically, it's better on orb tomb run, because you'll capture pan lords and they will beat up the greater mummies.

Training stealth is good in general, but on a centaur it's not a reasonable protection against getting instabanished.

If failed banish is going to be free, successful banish needs to cost more piety. Mahkleb is already extremely strong and can already spam banish.

But OP is right. Ammo quantities at that point in the game are still low, and picking ammo up after or during battles is horrible.

I think their shield apt should be reduced and weapon apts increased to make two-handers more attractive.
