Nice! I eventually want to do this too, but I always end up going for too many runes and get killed in post game. I have 3 so far though, ghoul, ogre (15 rune) and Mino.

Some sort of chain bladed weapon would be kind of cool. Axe skill for to hit and throwing skill for range increase. You might start with a 1 range with 1 throwing, and work up to a 4 range at 20 throwing or something, I dunno.

Killer bees suck, but they are vulnerable to poison so use meph cloud. If you have to, drop it on yourself when they surround you and use a potion of curing right after to get away.

Naga ice elementalists of Vehemet are pretty fun to play. You get see invis and poison resist, as well as a decent poison spit. The armor spell helps on early levels when you are forced to melee. Veh gets the throw icicle up fairly quickly, and you have extra stuff to eat like kobolds due to the rP....

Elf always seems to be way easier for spellcasters to me. My melee dudes usually have 10 evoc by the time I hit it, and I use all the wands I have been saving down there. Elves don't have a ton of HP, so all those wands of fire, cold, lightning and draining work pretty decent in the narrow corridors...

Ogre Hunters are pretty decent at killing low level ghosts with their thrown rocks. I remember reading somewhere that ghosts don't use missile weapons,so no worries on that. If it does look like he is about to die at later levels, just drop your GSC or whatever weapon he has before you die.

I am not positive, but poison and sticky flame make the visible I think. If you are a spellcaster you can get in a corridor and just shoot your longest ranged attack with Z. I usually just use a fog or leave the level since they don't stay near you.
