I think you just got unlucky. Polymorph is only really good against a small number of monsters. Also, identify your wands by zapping them at a rat or such.

If I'm human I can go TSO and always have almost full health, food appears at a faster rate than you eat it, poison is cured with the most common potion in the game, TSO gives life protection.

No, the species aren't all equally balanced, this is intentional AFAIK.
Centaurs are easy, mummies are hard.
Centaurs, Spriggans, deep dwarves are all generally considered to be easy.

Probably not better than melee anything but melee is really quite powerful for anyone once you're a decent player and you character has some skill.

I once had a shirt with a pattern that was uncomfortably close to dazzle camouflage. It prevented me from finding out where various parts of my body were.
