I think you just got unlucky. Polymorph is only really good against a small number of monsters. Also, identify your wands by zapping them at a rat or such.

But it kills you strength and stealth, making it useless to both stabbers and heavy armour fighter types!

Centaurs, Spriggans, deep dwarves are all generally considered to be easy.
