Play a HOGl of Oka or Mahkleb.

Put on the biggest armours you can find when you find them. If you go Oka, use heroism. If you go Mahkleb, just enjoy finishing battles at full hitpoints.

You might want to try a hardier melee-oriented species/background first, to get the hang of some of the basics involved with transitioning out of the early game. What I see immediately when I look at your builds is that you have extremely low AC, decent EV, and extremely poor melee weapons equipped....
