This game doesn't have a difficulty setting. You pick your difficulty by picking your race, in some sense.

It's fine if some races are more powerful than others. Nothing needs to be changed about Deep Dwarves IMO.

Does it really matter which background is stronger or weaker in the first 3-4 levels of the dungeon? If you die that early, who cares? You start a new game and in 3 minutes you're back where you died.

Simply do not use stairs just as you described it. Your problem is solved.

IMO there's no need for different game modes. If you want harder difficulty, pick a harder race/god/class.

Stealth allows you to have a better control over which enemies are gonna agro.
